The Doctors Orders: Grills are too expensive not to maintain. We at the Grill Doctor recommend you clean and tune up your grill two or three times a year. This will help keep your grill in top shape for many years to come. We also recommend keeping a cover on at all times to help protect if from the elements. Turning off your LP tank after cooking will help prevent wear and tear on your gas regulator. You should check for rust on your grates. Cast iron cooking grates should be oiled to prevent from rusting. If you cooking grates are beyond repair or you need replacements, just give us a call and we will order and install the parts ASAP. Grill Doctor Prescription: Grilled Tuna Steak 4 7 oz tuna steaks 1" thick 1/4 cup fresh lemon juice 1 tablespoon extra-virgin olive oil 2 centiliter garlic -- minced 2 teaspoons chopped fresh oregano 1 tablespoon grated lemon zest 1/4 teaspoon salt Prepare a grill. Meanwhile, rinse the tuna, pat dry, and place in a shallow glass or ceramic dish. In a small bowl, whisk the remaining ingredients. Pour over the fish and cover with plastic wrap; marinate for 30-45 minutes in the refrigerator. When the fire is ready, drain the tuna and place it in a fish or meat basket. Grill the steaks 4" from the heat, 3 minutes per side for rare or approximately 5 minutes per side to cook through. Pierce with a fork to see if the fish is flaky and done. Baste with remaining marinade if desired. Note: You can substitute lime juice and zest for the lemon. Source: Great Good Food by Julee Rosso
